You might think of pizza as fast food. As a quick takeaway meal that you buy when you need something easy.
But after a month or so of testing out the Gozney Arc Lite, I’ve come to the realisation that making pizza is a form of art. From making the dough, to managing stone temperatures, to ensuring an even cook on all sides, there’s a real process involved in crafting a fantastic pizza.
For someone whose last attempt to craft pizza in an outdoor oven was a bit of a disaster, I was a bit nervous to put the Arc Lite through its paces. But the compact design, open facade and simple controls meant that I not only managed to make some pretty good pizza (without it collapsing in a hot mess on the stone), but I also managed to expand my repertoire, creating flat breads and naan to accompany other meals.
As a gateway product to a fuller outdoor pizza oven experience, the Arc Lite is incredible.
What makes the Gozney Arc Lite stand out?
You know that when you test a product from a brand that focuses on a single category, that you’re going to be in good hands. Gozney makes outdoor pizza ovens, so there’s a real sense of focus with the Arc Lite.
The Arc Lite may be Gozney’s newest product, but it’s clear that it is the result of multiple generations of products, minified into a more compact unit. It’s designed specifically for those who have more limited outdoor space, but still want the power of a pizza oven that can hit temperatures above 500ºC.
The Arc Lite still uses Gozney’s signature “lateral rolling flame”, which uses a gas burner on one side to arc heat over the top of the pizza, mimicking the environment of a traditional wood-fired pizza oven.
But the design is well-insulated, so you can still cook even if there’s a bit of a wind blowing.
It is, effectively, one of the simplest ways to start making homemade pizza a regular part of your cooking repertoire.

Design and build quality
Weighing in at 12 kg, the Arc Lite isn’t necessarily light, but it’s not so heavy that you have to set it up once and never move it again. You can comfortably move it around, or even pack it up in your car to take to a friend’s place if you need to.
The unit itself is simplicity itself. There’s the slightly domed, off-black unit itself, which is enclosed aside from the front opening. There’s the pizza stone that sits at the bottom, and a flame grill guard that you install to protect the flame from an errant pizza turn.
In the box, you’ll get the peel – a stainless-steel number that’s easy to clean, and a turning peel to rotate the pizza as it cooks.
For the review, Gozney also sent me a starter pack, that included a pizza dough mix, a pizza cutter, a thermometer gun and a cover for the Arc Lite. There was also an epic pizza book packed full of recipes.
While these accessories aren’t included in the core product, I would definitely recommend budgeting for the cover at the very least. And if you can afford it, the pizza cutter and thermometer gun are of exceptional quality, helping you get the most out of the pizza oven.
Beyond the core oven itself, you’ll need to BYO gas bottle. It uses the newer LCC27 fitting, which caused some confusion when I first unboxed the oven, given I only had the older style gas bottle and didn’t even realise there was a new connection type.
Fortunately, it was just a simple swap and go exchange at the service station to get the new style connector, which effortlessly connected to the gas hose of the Arc Lite.

Performance
Making pizza is an art form. And art takes time to master.
Your dough needs kneading and proofing. The oven needs 20-25 minutes to heat up. You need to chop your toppings.
Gozney understands this. All the materials suggest ways to make it easy to get started, like buying pre-made pizza dough balls from the supermarket, and making pizza for the family before inviting friends over.
It’s good advice. Despite following all the advice, my first pizza was a bit of a squashed mess. It tasted delicious – or so my son told me – but it was less pizza shaped than a squashed oblong.
Subsequent pizzas improved dramatically, as I added more flour to the bottom of the base before trying to slide it onto the peel.
But the process doesn’t end when you insert the pizza. The left side of the oven – where the flame comes out – is invariably hotter than the right. To deal with this, you have to rotate the pizza as it cooks, after the heat from the stone has set the base.
The motion of rotating a pizza as it cooks is something I still haven’t perfected. It’s a combination of sliding, lifting and dragging the pizza, but not having it get too close to the flame or the front of the oven.
This may sound like a lot of effort, but there is a real sense of zen in making it. Because of the high heat – depending on what you’re cooking, the oven will hit upwards of 500ºC — it does not take long for anything to cook. A basic Neapolitan pizza will be ready in under two minutes.
That means that success and failure is quickly forgotten as you simply move on to the next pizza.
The dial on the front controls the temperature, but it doesn’t offer a lot of granular control. There are two zones – high and cool – and because there’s no temperature gauge within the oven, you need to rely on an external device like the temperature gun to understand exactly what you’ll be cooking on.
Beyond pizza, the Arc Lite is also great for other styles of flat bread. I made some truly – and I mean truly delicious flatbreads from this RecipeTinEats recipe, as well as trying my hand at naan bread.
The naan bread didn’t quite go to plan… It puffed up like a balloon, and in the Arc Lite’s smaller oven cavity, needed to be squashed down in order to be removed from the oven, as they had puffed to be taller than the opening. They still tasted unreal, though.

Verdict
I’ve said it a few times in this review, but let me say it again: Making pizza is like creating art. It takes practice, patience and the right tools. The Arc Lite is a great tool to get started with.
The Gozney Arc Lite may not be the most powerful pizza oven on the market, but as a starting point, it is exceptional. At $649 RRP, it’s affordable enough to make a great gift, and its compact design means you can use it on a balcony even if you’re an apartment dweller.
The Arc Lite has reignited my passion for pizza. Which is a terrible thing for my waistline, but also great for my mental health.
While it would be nice to have a clearer idea of temperature control, I can understand why it’s excluded in this compact design. It ultimately doesn’t detract from the experience, either way.
